MEAT WITH MUDEJAR CHARACTER

A JEWEL OF JAPAN IN THE PUREST MUDEJAR STYLE


Wagyu in the heart of Mudejar territory, with the purest genetics of the most highly valued bloodline in Japan. In the heart of Teruel, one of the most exclusive meats is born. In an idyllic farm near the town of Aliaga, Wagyu specimens of the Tajima Wagyu 100% “Full Blood” variety are grown. Through a strict selection process of the best genetics and the purest breed, they take care of the smallest detail during all the phases of Wagyu breeding. They take care of every stage of their lives, from the moment they are born to their full adult maturity. The Wagyu grow up suckling from their mother’s udder until they are 6 months old, and then graze freely in the fields, while they begin a careful and secret natural feed based on cereals that is adapted to each of their stages. In this way, the adult Wagyu is the result of animal welfare and breeding, environmental management of the surroundings, careful nutrition and the integrity of the product. You can taste the different versions of this exquisite meat available on our menu.
